Trays of food are placed inside a blast freezer (or chiller) and a fan blows chilled air over the food at a high velocity  to ensure freezing as quickly as possible. This ensures that loss from evaporation during the cooling process is reduced and also minimises the size of the ice crystals forming in the food once frozen.
